  • 1 pound boneless, skinless chicken breast cut into bite-sized pieces
  • 1 tablespoon olive oil extra virgin for flavor
  • 2 tablespoons fresh lemon juice adds flavor without sodium
  • 1 teaspoon dried oregano or use fresh if available
  • 1 teaspoon dried basil or use fresh if available
  • 1 clove garlic minced
  • 1/4 teaspoon black pepper to taste
  • 4 skewers wooden skewers soaked in water for 30 minutes to prevent burning

  1. In a bowl, combine the olive oil, lemon juice, oregano, basil, minced garlic, and black pepper. Add chicken pieces and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes.
  2. Preheat the grill to medium-high heat. Thread the marinated chicken pieces onto the soaked skewers.
  3. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  4. Remove from the grill and let rest for a couple of minutes before serving.
